Yellow Lentil (Mung Dal) ,dry roasted 200grams
Fish Head (Rui,Kaatla) 1 large
Bay Leaf (Tej Patta) 2
Dry Red Chilly (Sukno Lonka) 2
Five Spice (Paanch Phoron) 1/4 tsp
Onion (Peyaaj) ,chopped 1,medium
Tomato, grated 1,medium
Green Chilly ( kaancha Lonka),slit 4
Garam Masala Powder 1/2 tsp
Turmeric Powder (Holud Guro) 1/2 tsp

Salt (Nun) as per taste
Sugar (Chini) as per taste
Desi Ghee (Gawa Ghee) 1 tbsp
Mustard Oil (Sorser Tel) / Refined Oil 4-6 tbsp
Method :
Wash and clean the fish head pieces well and dry. Sprinkle turmeric powder and salt and keep aside.
Dry roast the lentil on low flame till golden in colour. Remove and wash. Soak the lentils for 15 minutes .
In a pan, put the lentils and add enough water to cover . Put on gas to boil. Boil till soft.you may use the pressure cooker to do the job.
Heat the mustard oil in a wok or deep pan. Fry the fish heads well on medium flame till crispy. Remove and keep aside. Discard the oil.
Heat 1 tsp oil in a deep pan and add the bay leaves , dry red chillies and the five spice...Paanch Phoron . Stir fry a bit. Add the onion chopped and fry well. After it turns brown add the tomato and fry again.
Then add the daal.
Add the spices......Turmeric Powder, Salt, Sugar. Saute all well.
Then add the fish heads and on low heat bring to boil.
Add green chillies and sprinkle garam masala powder.
Turn the gas flame off and add Desi ghee. Cover and keep aside for 10 minutes before transferring to a serving bowl.
