Posto Chichinga (Snake Gourd with Poppy Seed Paste)

Today I have nothing Hot to write home about as I didn't cook anything special for the family. 
 As its getting a bit hot with the temperatures on the rise here in Kolkata, what we are having is cooling on the stomach.....Posto Chichinga!!!

You won't find a single Bengali in kolkata who isn't addicted to Posto (Poppy seed). Its cooling they say and add poppy seed paste to every other dish, vegetarian as well as non-vegetarian.

Posto Chichinga....here goes....

Snake Gourd with onion , fried , tastes good as it is but the addition of poppy seed paste entirely changes the dish. Serve it with Kolai er Dal and the combination is just heavenly, and most Bengali's would  give up their left hand for this combination ....

Peel  the skin off two Snake Gourds and chop into small pieces.

Heat 2 tbsp mustard or refined oil in a wok and when it heats up add a pinch of Nigella seeds and 2 Dry Red Chillies , slit into two. When they crackle, add 1 large Onion, chopped into small pieces.  Stir fry till the onion is translucent and then add the chopped snake gourd pieces. Cook stir frying. 

Add Salt as per taste and some Turmeric powder (Use Just a little).

Soak 4 tbsp Poppy Seeds with 2 Green Chillies in a little water and grind to a smooth paste.

Lower the flame, put a lid. When the veggies soften a bit , add the Poppy seed paste and mix. Add 1 tsp Sugar.  You can add 2 Green Chillies if you like. Put the lid back and on low flame leave to cook. The dish will cook in its own juices. When the water dries up completely and veggies are cooked , switch the flame off and SERVE .....

Mustard/ Refined Oil............................................2 tbsp
Nigella Seeds(Kalo Jeere)....................................1 pinch
Dry Red Chilly........................................................2
Salt..........................................................................as per taste
Turmeric Powder................................................1/2 tsp
Sugar......................................................................1 tsp
