Cabbage Roll (Cottage Cheese and cabbage Roll)

                    Its cold outside and your friends decide to drop in.....churn out your favourite snacks and enjoy good company. All the time we have lip smacking non-vegetarian dishes but try this exotic vegetarian one. Give in to green sometimes I say.

                  When my mother fell ill and had to be hospitalised, I rushed to be by her side  in mumbai and as a result I missed out on my nephew Abir's thread ceremony in kolkata. This was one item on the menu.

                  My mother in law loved it and so I thought of making it as per her instructions. It turned out really good.


Cabbage Roll



Ingredients :

For The Filling :


Cottage Cheese...................................................250 grams
Fresh Coriander,minced.......................................4 tbsp
Onion,minced.......................................................1,medium
Ginger,minced......................................................1 inch piece
Green Chilly,minced..............................................2
Pepper Powder.....................................................1/4 tsp
Salt......................................................................as per taste
Sugar....................................................................1/2 tsp
Garam Masala Powder..........................................1/4 tsp
Cabbage Leaves...................................................5-6
Refined Oil............................................................2 tbsp


For The Batter :


Cornflour..............................................................2 tbsp
Gram Flour..........................................................6 tbsp
Baking Powder....................................................2 pinches
Salt......................................................................as per taste
Rice flour.............................................................2 tsp

Refined oil...........................................................for deep frying


This Is How I Prepared The snack :


Take a few clean and  large size cabbage leaves. The outer coverings of a cabbage are usually big ones. Wash and wipe dry with a kitchen towel to dry them.

In a wok, heat the oil. Then add the onion, green chilly and ginger and saute well till oil separates.

Mash the cottage cheese with hand and add to the wok. Mix well. Keep stirring.

Add all the spices and blend well. Keep aside to cool.

When the filling is cool,  place one cabbage leaf on a warm griddle and press with a clean kitchen towel.This will soften  the leaf. Prepare all the leaves in the similar way .

Now, place one leaf on your palm and place the filling in the middle of the leaf.

Wrap the filling carefully to make an envelope.

Prepare a batter with all the ingredients. Beat to make fluffy.

Now carefully dip the envelops in the batter and deep fry in hot oil till brown and crispy.

Remove on a paper napkin and when the excess oil is soaked then transfer to a serving dish. Serve hot.
