Gajorer Halwa (Indian Carrot Halwa)

                    Carrot Halwa is a tradional North Indian Dish. Its high on calories but very delicious and this microwave one takes so much less time to be prepared that you would want to prepare it more often. Red Carrot is required to get that rich red colour of the halwa but if you are not making it when its available, go for the orange ones. In kolkata, we get fresh carrots in the winter months, though with the rise of super markets, nice red carrots are now available round the year.

                      I learnt this recipe from  ma and I think she follows chef Sanjeev Kapoor's recipe. Here it is for you....


Gajorer Halwa



Ingredients:


Clarified Butter(Deshi Ghee)................................................3 tbsp
Gajar(Carrots), grated.........................................................10,medium
Sugar........................................................................................1 cup
Green Cardamom Powder...................................................1/4 tsp
Dried Milk (Koya/Mawa),mashed.......................................1 cup
Pistachios,chopped..................................................................10
Cashewnuts..............................................................................10
Raisins(Kismis).........................................................................10
Almonds,chopped.....................................................................10


Method :


Peel the carrots and keep soaked in water. Remove and dry with a kitchen napkin.Grate the gajar and chop the almonds. Keep aside.

Put the grated gajar in a micro wave proof bowl. Mix the ghee in it. Also add the cardamom powder.Put the bowl in the microwave oven on HIGH for five minutes.

After five minutes take the bowl out and mix the sugar and again place the bowl in the oven on HIGH for two minutes.

Next take out the bowl and mix the Khoya (Mashed with hand), cashewnuts, almonds, raisins and cook for 2-2 1/2 minutes. Remove, sprinkle the chopped almonds or cashewnuts and serve hot.

Tips :

Always add sugar in the end to a dish as sugar caramalises and spoils the colour of the dish.
