Paneer Makhni



This rich white gravy has a luscious texture created with cream,butter and cashewnuts.
Indian Vegetarian food is just not complete without one or more cottage cheese (Paneer) dish.
It is a good source of protein for the vegetarians.
I am sure you all must have tried this dish at least once.
I have written my method of preparing, if yours is different do let me know ....

Ingredients :


Paneer,cut into1"cubes........................................................250 grams
Cashewnuts(kaju badam).....................................................3 tbsp
Refined Oil...........................................................................2 tbsp
Butter...................................................................................2 tbsp
Water...................................................................................1/2 cup
Garlic Flakes........................................................................4-5
Ginger...................................................................................1 inch piece
Coriander powder.................................................................2 tsp
Garam Masala Powder..........................................................1/2 tsp
Dry Fenugreek Leaves (Kasoori Methi).................................1tbsp
Tomato ketchup....................................................................1 tsp
Salt.......................................................................................as per taste
Green Chilly Paste.................................................................1/2 -1tsp
Milk.......................................................................................1 cup
Cream...................................................................................1/4 cup


Method :

Soak the cashewnuts in warm water for 15 minutes. Discard water and then grind to a smooth paste.

Grind the garlic and ginger together.  Also grind green chilli to paste.

Heat Oil in a  deep pan / kadhai(Wok) and add the ginger-garlic paste. When the paste turns golden add kasoori methi and tomato ketchup. Stir fry.

Add all the spices......coriander, garam masala powder and salt . Mix well for a few seconds.

Add the cashewnut paste and mix.

Add some water and bring to a boil. Simmer on low heat.

After 5 minutes add the cottage cheese (Paneer) pieces. Remove from heat and cool.

Then add the milk and cream to the cool  the ingredients in the wok..

When the contents of the wok are absolutely cool, should you add the milk and cream or else both will curdle.

Now heat the wok with all ingredients on low heat and stir carefully for 5 minutes. 

Remove from fire and serve hot in a serving dish.
