Pati Shapta (Bengali Sweet PancakeCrepes)

Pithas are made to celebrate a new crop. Many of the festival sweets are now available in the sweet shops and Patishapta is one of them. Earlier, as winter set in we would wait eagerly for ma to prepare pitha. Pithas are cakes made from rice or wheat flour mixed with sugar or gur (jaggery), khoya (dried milk),coconut, chana (cottage cheese),Suji (semolina) etc....

My mother in law used to prepare a number of pithas....gokul, dudh puli, pati sapta, chandra puli to name a few, but with failing health she has given up and now days makes only some....The tradition of making pithas must continue , she says...


Ingredients for the envelope:

Dudh (Milk) ...........................................1 cup
Maida(Refined Flour ).............................4 tbsp
Suji(Semolina).........................................1/4 cup
Cooking Oil as Required

Ingredients for filling :

Khoya (Dried milk)..................................1 cup
Elichi (Cardamom)...................................4-5, powdered
Sugar......................................................4 tbsp or as per taste (patishapta is not too sweet)

Procedure :


Mix milk, semolina and flour to form a smooth paste. There should be no lumps in the mixture.

Pour 1 tsp oil in a frying pan and heat it.

Take some of the flour mixture in a ladle and spread it on the pan to form a circle of about 4" in diameter.

Fry it till one side turns light brown.

Flip over and fry the other side too.

Remove from heat and set aside.

Fry all the mixture in the same manner.


How to make the filling......

Heat the milk in a pan on medium heat to prepare the khoya for the filling .

Stir it till the milk becomes quite thick in consistency.

Add the sugar to the thickened milk and continue to stir until the mixture becomes solid.

 Mix the powdered cardamom and set aside. Cool the prepared khoya.


Procedure to wrap Patisapta :


Put the filling lengthwise on the envelope.

Wrap the envelop from both sides to form a roll and cover the filling.




Nolen gurer pati shapta

Nolen Gurer Pati Shapta :

Suji...............................................1/2 cup
Maida .........................................1 cup
Sugar............................................2 tbsp
Milk..............................................2 cup
Nolen Gur....................................as required





 Method :

To make this Pati Shapta, mix suji to milk and soak for 1 hour at least.
Then, just mix nolen gur with sugar to the batter for the envelop. Remove all lumps well.
 But Pati Shapta is not a very sweet dessert so don't add too much sugar or gur. 
The rest of the recipe is absolutely the same as a plain one.

You can garnish with condensed milk on top or cream and  finely chopped nuts.
Many times I serve the nolen gur itself  with the Pati Shapta.
