Soup is vegetables or meat or meat and vegetables combined ,served in liquid form.
This one is an easy recipe. Making soups at home is not as difficult as I thought earlier and as I always enjoyed hot soups in the cold winter months and chilled soups in the hot months, I decided to adopt easy recipes at first and this is one such recipe.
Indian soup recipes are available everywhere on the net and I decided to make Matar Sorba or Peas Soup adopting one such recipe to suit my tastes.
Ingredients :
Shelled Peas 1 cup
Onion,Large 1
Bay Leaf 1
Peppercorns 4
Ginger Paste 1 tsp
Salt 1 tsp
White Pepper 1/4 th tsp
Milk 1/2 cup
Water 3 cups
Oil 1 tbsp
Cornflour 2 tsp
Method :
Heat 1 tbsp olive oil or butter in a wok/Kadhai.
Add 4 peppercorns and bay leaf.
Saute a bit and then add 1 large size onion ,chopped.Saute it a bit.
Now add 1 cup boiled peas and 1 tsp ginger paste and 3 cups water. Mix well. Cover and cook for at least10 minutes.
Put the gas flame off.
In a blender, put the matar (peas) and onion and grind to paste with the help of the stalk. Make a smooth paste. Now mix the pulp from the blender with the stalk.Put all back into the wok/pan.Add 1 tsp salt , 1/4th tsp white pepper powder and 1/2 cup milk and keep mixing all together Add cornflour paste to thicken. Keep stirring so that lumps are not formed.
Serve hot.
