Omeleter Dalna(Omelette in gravy)

 Ingredients :

Eggs                                                4
Potato,diced                                    2
Onion paste                                     1 large onion
Green Chilly Paste                           2
Green Chilly,chopped                      2
Ghee                                               2 tbsp
Vegetable oil                                   2 tbsp
Turmeric Powder                            1 tsp
Red chilly Powder                           1 tsp
Ginger Paste                                   1 tsp
Garlic Paste                                    1/2 tsp
Garam Masala Powder                    1/4 th tsp


Method :

Beat the eggs very well with a beater.

Add onion and green chillies finely chopped and a pinch of salt.

Heat a pan. Add vegetable oil and let it heat up.

Add the eggs and make an omelette. Fry the omelette till golden in colour and then remove to a dish.
If you wish you may make two omelettes instead of one.
Cut the omelette into pieces.                                                
Masala Omelette

Heat ghee 1 tbsp and 1 tbsp mixed in a wok.

When hot, fry the potato pieces and remove.

 Add 1 tsp sugar and saute. Then add turmeric powder, red chilly powder, ginger paste,onion paste, garlic paste and  cook well sauteing all the time.

Add some water to help so that the spices do not burn.

Add salt and the potato pieces. Cover and cook till soft.

Remove cover and add the omlette pieces.There should be a little gravy.

Let it boil for a few minutes. Add garam masala powder and 1 tbsp ghee.

Serve hot.
