Internationally Bollywood and Hindi films have put us, India in a prominant place, and Bollywoods interest in all things Bengali was probably revived in the recent times with films like Devdas,Parineeta and more recently Kahaani. Kolkata or Bengal portrayed in these films vividly evokes the spirit of the city i live in. Speaking of which,plenty has been happening on the streets of kolkata and its suburbs and seeing my city on silver screen is fun. Food in kolkata excites every taste bud be it sweet ,salty ,tangy ,spicy or sour. You wont find a kolkatan who is not fond of chinese, be it from a "thala" or tangra,the famous china town of kolkata.I have had the opportunity of sampling what we know as authentic chinese cusine in kolkata.Here is my version of the egg fried rice.
Rice (basmati) 2 cups
Eggs(Beaten) 4
Potato 1
Carrot 1
Beans 5
Peas 4 tbsp
Cauliflower 4 tbsp
Garam masala powder 1 tsp
Cumin(roasted and powdered) 1 tsp
Coriander powder 1 tbsp
Red chilly powder 1 tsp
Salt as per taste
Ghee 3 tbsp
1) Boil the water with salt and cook the rice. Cool by spreading on paper.
2) Chop Carrots, Beans, Potato into small pieces. Steam all vegetables, Peas and cauliflower.
3) Heat ghee and fry the vegetables with dhone , jeera,c hilly powder ,g aram masala powder
and salt for five minutes.
4) Heat ghee in a different large size pan. Add beaten eggs and saute well. When well fried add the rice. Saute well for five minutes.
5) Add the fried vegetables. Mix all with light hand.
6) Serve hot.
