Pakwan with Chana Dal

Breakfast is by far the most important meal of the day. Ask any  nutritionist, if you don't believe me. It is supposed to be a fortifying meal,that will see you through to lunch. Also i think in these modern times perhaps the only meal that most families have together. A good breakfast will satisfy and refresh you, and may consist of either one or many dishes.
How you start your day goes a long way in determining how the rest of it will go.While Fried stuff like Parathas, pooris or idli- dosa would feature in an Indian breakfast, items such  as fresh chaats , sandwiches, juices, sprouts etc also are equally liked.

PAKWAN



Ingredients :

Refined Flour(maida)                            500 grams
Desi Ghee                                           2 tbsp
Salt                                                   1/2 tsp
Desi  Ghee/Refined Oil                         for deep frying
Water                                                to make the dough

CRISPY PAKWAN



Method :

Rub desi ghee into the refined flour.
Add salt.
Knead with water into medium soft  pliable dough.
Make small sized balls,cover with a damp cloth and rest the dough for 10 minutes.
Roll into thin puri's,Prick all over with a fork or knife. 
Deep fry in medium hot oil or ghee till light brown and crisp.
Drain on absorbant kitchen paper  
Serve hot with chana dal and  mixed vegetable achhar.


CHANA DAAL RECIPE

Chana daal                                            1 cup  
Water                                          
7 cup  
Salt                                           
1 tsp  
Red chilly powder                          
1/4 tsp  
Turmeric powder                          
1/2 tsp  
Cumin powder                              
1/2 tsp  
Garam masala                              
1/4 tsp  
Ghee / clarified butter                   
1 tblsp  
Chopped garlic                              
1/2 tsp 


DAL-PAKWAN
Method :
Soak the chana daal in 4 cup water for 2-3 hours then wash and drain.
Boil 3 cups water, ginger, turmeric and the salt in a pan.
Add the chana dal, cover the pan and cook over medium flame for 30 min or till the dal is tender and stiring occasionally.
Stir the dal when cooked.
For the tempering heat ghee in a pan and when hot add cumin seeds. When the seeds begin to sputter add garlic.
Stir well and fry till the garlic turns light brown. Add the red chilly powder and stiring it, pour it immediately over the cooked dal and cover the pot
Chana dal is ready to be served
