Diwali Special- Gulab Jamun Pudding

This is a pudding that I prepare quite often for my family and I would love you to try it out. I assure you its going to turn out quite well .


Ingredients:


Small size gulab jamuns       - 150 gms
Full cream milk                    - 1 litre
Sugar                                 - 200 gms
Eggs                                  - 4 nos
Vanilla essence                   - 1 tsp
Cashew Nuts (chopped)        - 2 tbsp
Walnut (chopped)                - 2 tbsp





Baked Gulab Jamun Pudding



Method:

Boil the milk and reduce to about 150 ml. Add sugar and cook for another 5 min or till the sugar is fully dissolved. Keep aside to cool. Then beat the eggs lightly and add the same to the reduced milk. Also add the vanilla essence, nuts and gulab jamuns. Transfer the mix into a baking tray and put it on a tray of water. Water should reach upto half the height of the pudding dish. Bake for 40 to 45 min at 180 degrees Celsius.  

Alternatively you can also cook the pudding in a pressure cooker. For this pour the mixture in a metallic bowl which goes into the pressure cooker, cover it with aluminium, and place it in the pressure cooker with water in it.
