Diwali Speacial- Ghugra(gujrati snack)

Ingredients :

Refined flour                                              1cup
Ghee                                                          11/2tbsp
Salt                                                             1tsp
Cold water                                                 1/2cup
Oil                                                             31/2cups
Cumin seeds                                              1/2tsp
Mustard seeds                                            1/4th tsp
Curry leaves                                                10-12
Peas,boiled                                                 2cups
Red chilly powder                                        1/4th tsp
Ginger-green chilly paste                              2tsp

To Serve :
Tomato ketchup                                          3tbsp

Method :
In a large mixing bowl take 1cup refined flour.Add 11/2tbsp ghee or white refined oil or sunflower oil,1/2tsp salt.Mix ghee and flour ,rubbing them together and then kneed to a stiff dough by adding cold water  little by little at a time.Cold water makes the ghugra very crisp.
Heat 2tsp oil in a pan.Add 1/2tsp cumin seeds,1/4th tsp mustard seeds,10-12 curry leaves and saute.Then add 2cups boiled and mashed peas.Saute.Add 1/4th tsp red chilly powder,1/2tsp salt, 2 tsp ginger-green chilly paste to the peas and cook for some time .When done remove to a bowl.
To assemble :
Make small same size balls from the dough earlier prepared.Then flatten it  into small rounds with the help of a rolling pin.Put a little filling in the middle and fold to make a semi circle.Press to seal the sides well.You can make a thick paste of 1tsp flour mixed with a little water and use it to seal the filling also.
Heat 2cups oil in a pan and fry all the prepared ghugras one by one in the hot oil.The oil should not be steaming hot so as not to burn the ghugras.Reduce the heat and cook slowly to get crispy ghugras.Serve hot with ketchup or any chutney of your choice.
