Diwali Special- Khejurer Laddu (Date Laddu)


Ingredients:
Ghee (Clarified Butter)                        - 1 tsp
Khejur (Dates) finely chopped             - 1 cup
Almond (chopped)                             - ¼ cup
Pistachios                                        - ¼ cup
Walnut                                            - ¼ cup
Raisins                                            - ¼ cup
Green cardamom powder                    - ½ tsp
Coconut powder                                - as required
Water                                              - ¼ cup

Method:
Heat a kadhai and add 1 tsp ghee. Add the chopped dates and fry for 2 min and then add ¼ cup water. Let it cook (stirring continuously) till it is pulpy and mushy. Add more water if required. Then add the almonds, pistachios and walnut. Mix well. Add the raisins and cardamom powder. Mix well and cook till the mixture becomes almost dry.

Remove to a dish, spread and cool. Take a plate and spread the coconut powder. Make 1 inch balls of the date mixture and roll them on the plate with coconut powder and arrange on a serving platter.
