Baked Cola Pudding

Holidays are special. Shruti, my younger daughter is home. And it is great when she is, cause she bakes damn well. My mother used to and I loved the way the house smelled when she baked. I would come home from school, dump my bag, take a wash and mom would serve me her Nankhati or a Fruit cake. It has been ages since I last tasted these, but now when Shruti bakes I cant help but  become nostalgic.

 Baked Cola Pudding








Ingredients :

Butter..............................100 grams
Caster Sugar..............................................120 grams
Flour............................150 grams
Eggs.....................................3
Vanilla Extract.............................................................2 tsp

Coke........................................................................300 ml 
Cocoa Powder...........................................50 gms
Baking Powder......................................................1 1/2 tsp

This is what Shruti does.....



Take butter at room temp, cut into cubes and beat till light n fluffy.

Add the caster sugar tbsp by tbsp while beating the butter.

Beat till sugar is well mixed.

Add the eggs, one by one, and the vanilla extract.

Sift the cocoa powder and flour and gently fold in the mix.

Next add the baking powder.

Lastly add the coke and mix. Immediately pour into greased a cake mould. 

Pre-heat  the oven for 10 minutes  at 180 degrees.

Bake for 40 min at 180 degrees.

When absolutely cool then cut into pieces and serve.


Its a simple procedure and the end result is delicious. As you can see she is not a professional and this is her innovation. 


Here is a recipe for a simple everyday cake my mom used . I am sure every family has a tried and tested one like this. Do give mine a try....

Eggs............................................4
Sugar.................................2 cups(500 ml cups)
Flour........................................2 1/2 cup
Milk...........................................1 cup(250 ml)
Refined Oil.................................3/4 cup(175 ml)
Baking Powder............................2 tsp
Vanilla Essence...........................1 tsp

Procedure:

Pre-heat oven to 180 degree celcious
Grease a pan. You may use butter paper to line the insides of the baking tray as well.

In a large mixing bowl, beat sugar and eggs with an egg beater until thick, say for about one minute. Add the flour, milk, oil, baking powder, and vanilla essence. Beat all to make a smooth batter, say for a minute. Pour the mix into the greased baking pan. Bake in a pre-heated oven for 30-40 minutes or until the top is golden. Put a toothpick in the center of the cake to test if its ready. If the toothpick comes out clean its ready. Cool the cake. Carefully loosen the sides , overturn the cake on a dish. Cut into pieces and serve.
